il creatore di questa ricetta è mio marito Angelo che oltre a condire la pasta con questo pesto l’ha usato anche per preparare alcune bruschette a cui ha aggiunto delle scaglie di pecorino e dei pomodorini secchi.
questo comfortfood scalda il cuore e fa molto bene per le numerose proprietà benefiche del cavolo nero: ricchissimo di sostanze antiossidanti (che spengono i processi infiammatori, migliorano quelli digestivi e possiedono proprietà di prevenzione antitumorale), sali minerali e vitamine.
le migliori proprietà del cavolo nero sono l’azione anti-tumorale, anti-invecchiamento e protettiva di occhi e cuore.
questo cavolo ha un aspetto inconfondibile, le sue lunghe foglie scure e arricciate sono da mangiare quando sono fresche croccanti e belle carnose.
provalo anche semplicemente cotto al vapore e condito con olio evo sale e succo di limone.
Spaghetti con pesto di cavolo nero
ingredienti x 2 persone:
- 1 mazzo di cavolo nero
- 160 gr spaghetti integrali
- 1 cucchiaio mandorle Manuzzi fruttasecca
- 1 cucchiaio pinoli Manuzzi fruttasecca
- 1 spicchio di aglio piccolo senza anima
- 2 cucchiai parmigiano grattugiato
- 1 cucchiaio di pecorino grattugiato
- 4 cucchiai olio evo
- 1/2 cucchiaino di sale

the black cabbage is the prince of Tuscan cuisine and this recipe is an idea to use it in other preparations besides the exquisite ribollita.
the creator of this recipe is my husband Angelo who, in addition to seasoning pasta with this pesto, has also used it to prepare some bruschetta to which he added flakes of pecorino cheese and dried tomatoes.
this comfortfood warms the heart and is very good for the many beneficial properties of black cabbage: very rich in antioxidants (which turn off inflammatory processes, improve digestive processes and possess anticancer prevention properties), mineral salts and vitamins.
the best properties of black cabbage are the anti-tumor, anti-aging and protective action of eyes and heart.
this cabbage has an unmistakable appearance, its long dark and curled leaves are to be eaten when they are fresh crisp and beautiful fleshy.
try it also simply steamed and seasoned with olive oil, salt and lemon juice.
Ingredients:
- 1 bundle of black kale
- 160 gr wholegrain spaghetti
- 1 tablespoon almonds
- 1 tablespoon pine nuts
- 1 little clove of garlic
- parmigiano as required
- pecorino cheese as required
- extra-virgin olive oil
- salt
kale pesto:
wash well the leaves of the cabbage, peel for a couple of minutes, drain with a ramina and put them in very cold water for 1 minute, then drain.
remove the hardest central coasts * and keep only the dark green part. leave aside a couple of small leaves to use to decorate the dish. place the green part of the cabbage in a minipimer glass, almonds, pine nuts, garlic, a pinch of salt, 2 tablespoons of cabbage cooking water and 2 tablespoons of oil.
blend until the pesto is homogeneous but not perfectly smooth. add parmesan and pecorino.
this pesto must remain coarse and rustic but if you prefer a smooth cream you can still blend to make it more homogeneous.
cook the pasta al dente, drain it and keep aside a couple of tablespoons of cooking water.
season the spaghetti with the pesto lengthened with the cooking water of the cabbage and a couple of tablespoons of oil.
plate the spaghetti and decorate the dish with the parmesan and the small boiled leaves of the cabbage.
* the hard coasts that waste tritium and add them to a minestrone or a creamy vegetable
more idea:
if you do not like garlic you can omit it from the recipe.
this vegetarian recipe that can become vegan by replacing the Parmesan with wheat germ or gomasio.
